> WILD GINGER <

- Description:Aromatic root, smells like ginger; two heart shaped leaves, petioles & primitive flower hairy.
Note the hairy stem & heart shaped leaves. In May, the prinitive flower emerges. Found on rich soil in moist woods.

- Cooking Tips: Crushed root addes to salad dressings. When dried and grated it is an adequate substitute for oriental ginger. For the daring, gourmet, try boiling the root until tender...Then simmer in maple syrup, an UNUSUAL candy treat.

- Pharmeceutical Uses: Root was used to treat colds & cough, antiseptic & tonic.

Shortly after moving in, I thought I would take a walk and get to know the national park across the street. I found a Highbush Cranberry just like the one I used to pic off of when I was a kid. Well, I grabbed several berries and tossed them into my mouth... Blehck! they were disgusting! I later found out that there is an American Highbush Cranberry (yummy) and a European Highbush Cranberry (or assberry, as I call it)... I now know how to tell them apart WITHOUT performing the taste test.

That is the best name for a foul tasting berry...EVER. And I believe I have tasted that one once before myself, although I don't remember where.

If you think you have a morel, cut it open lengthwise. I don't think any of the look-alikes (and they really don't look that close anyway) are hollow. I've found a fairly big one of those growing in a local boy scout camp...that was a strange find....

> TROUT LILY <

- Description: Trout Lily or dog toothed violet has mottled leaves & small yellow lily-like flower.

- Cooking Tips: Young leaves may be boiled for 10 minutes & eaten, poor tasting. The tuberous root is also edible...after lengthy boiling. The real beauty of this plant is in the eyes of the beholder...As a foodstuff it's best left alone.

- Pharmaceutical Uses: Tae from root used to reduce fever. Crushed leaves used as poultice over ulcers.

> AMERICAN GINSENG <

- Description: Straight, erect stem, with 2 or 3 leaf stems; 5-11 leaves per stem. American Genseng root, a prised medicinal in China, sells for about $ 150 per pound. Commercially cultivated.

- Cooking Tips: Chinese cook root in chicken soup. They also eat berries.

- Pharmaceutical Uses: Ginseng root's active ingredients, called saponins ( glycosides ). Some saponins raise blood pressure, others lower it. Some raise blood sugar, some lower it. Obviously, more research is needed.
