Calling all cooks |
|
Hey, I am starting to get into cooking but don't know anything about it. I would really like to be able to cook on campouts, or even just at home. So, got any tips, easy recipes, or ideas, please post them!

The thing to know about cooking is that there are several basic tasks such as chopping, mixing, browning, marinating, etc., that are really the only skills you need. The difference between one recipe and another is a) which of these skills are used, and b) what ingredients are used. Anyone who wants to cook can learn to.
Here's a simple one to do at home. It makes great "fries" that are healthier because they're actually baked. Experiment with the seasoning:
- Cut 1 pound of large potatoes into fry-sized strips. (Peeling them first is optional.)
- Put strips in a bowl and sprinkle with black pepper and either ceyanne pepper, paprika, or chili powder.
- Beat 1 egg white and pour over the fries. Toss to cover evenly.
- Place the fries in a single layer on a cookie sheet that has been sprayed with a non-stick spray.
- Bake at 400 degrees F for about 30 or 40 minutes, turning occasionaly so they do not stick.
- They are done when golden on all sides.
- Serves 4 people, with about 2 ½ teaspoons less fat per serving than regular fries.

I don't have a lot of recipes, because I usually just cook what I know. Here's one though, that's just in time for the holidays. It's for peanut brittle. Wait! If you say that you don't like peanut brittle, that's because you've only tried the crappy, hard, store bought brittle. This is quite different. It comes with a warning or two: First, if you make it and give some to your friends, they will constantly be bugging you to make more. It really is that much better than store bought. Second, when you take it from the microwave, it is very hot and sticky. Use oven mitts and be careful.
Peanut Brittle
- Mix 1 ½ cups of white sugar and ¾ cup of corn syrup in a large microwaveable bowl
- Microwave on high for 3 minutes
- Stir well
- Microwave for another 4 minutes
- Add - ½ teaspoon of salt
- 1 tablespoon of butter
- 1 teaspoon of vanilla
- 2 cups of peanuts
- Stir well, then microwave on high for 6 minutes
- Remove from microwave and quickly stir in 1 teaspoon of vanilla and spread on a cookie sheet
- Allow to cool
