Yep, King, I fly-fish quite a bit. Mainly for trout and other panfish. Salmon when I get the rare chance. Brookies when I used to live in Maryland.
One of my favorite activities.
Mostly I do catch-and-release, but I occasionally keep a nice one for dinner.

Sorry King, just now noticed that you wanted to know what flies?
Basically anything they'll bite on!!!
Actually though, I try to match-the-hatch and experiment from there. And get any current reports from bait shops and other fishermen.
I enjoy fishing nymphs and nymph-rigs, woolly buggers, yarn eggs, marabous, San Juan worms, among others. I'll fish dry-flies, and I enjoy them, but I just don't feel as confident in my presentation (to the fish) as I wish I could be. I figure I'll spend the rest of my life working on improving my presentations.
I also like to fish poppers for bluegill, they're always fun.

Sounds like a great trip! I just saw your pictures and they were awesome.
What's your new rod? What reel did you match it up with?
And most importantly, what flies were they biting on?

I fly-fish for tree fish. I have never taken it very seriously because all of our rivers are either running way to fast with lots of tree cover. I have tried to do it off of a boat on a lake and had alright success, but like I said, I have never really taken it very serious.
