- 3 squirrels, cut in serving pieces
- salt & pepper
- 2 tbsp, cooking oil
- 1 onion, chopped
- 1 stalk celery, chopped
- 1/2 cup chopped green pepper
- 2 tbsp, chopped parsely
- 1/8 tsp, red pepper
- 3/4 cup uncooked long grain rice
- 1- 1/2 cups water

Dry squirrel pieces on paper towel & sprinkle with salt & pepper.
Brown in cooking oil in a heavy skillet. Add onion, celery, green pepper & parsley & saute until vegetables are wilted.
Put the squirrel back in the pan & dust with red pepper. Cover & cook slowly for about 1 hour, or until squirrel
is tender. Add water & rice, Stir, cover & cook until rice in tender, 30 minutes more. Adjust salt to tast. Serves 4.
